cups Original Bisquick™ mix

cup very hot water

tablespoons vegetable oil

smoked string cheese pieces (from 4- or 8-oz package), cut lengthwise in half

cup Italian-style tomato paste

small onion, cut lengthwise in half, then cut crosswise into thin slices

medium bell pepper, thinly sliced

can (4 oz) mushroom pieces and stems, drained

package (3.5-oz size) sliced pepperoni

can (2 1/4 oz) sliced ripe olives, drained, if desired

cups shredded mozzarella cheese (8 oz)
Steps

1In large bowl, stir Bisquick mix, water and oil until soft dough forms; beat vigorously 20 strokes. Let stand 8 minutes.

2Move oven rack to lowest position. Heat oven to 450°F. Grease 12-inch pizza pan with shortening or cooking spray. Press dough on bottom and 1 inch over side of pizza pan. Place string cheese along edge of dough. Fold 1 inch edge of dough over and around cheese; press to seal. Bake 7 minutes.

3Spread tomato paste over crust. Top with onion, bell pepper, mushrooms, pepperoni and olives. Sprinkle with mozzarella cheese. Bake 8 to 10 minutes or until crust is golden brown and cheese is melted.

Short on time? Omit the string cheese, and press the dough just on the bottom of the pizza pan, not over the side.

Serve this special pizza just like pizzerias do by providing containers of grated Parmesan cheese and crushed red pepper flakes for sprinkling on pizza as desired.
