Crunchy Crumb Pork Appetizer is a 2013 Bisquick Family Favorites Recipe Contest award-winning recipe developed by Janet Harmon, 1st Place, Ohio State Fair (Columbus, OH).

Ingredients

  • 1 1/2

    cups Original Bisquick™ mix

  • 2

    eggs

  • 3/4

    cup milk

  • 2

    cups cooked finely chopped pulled pork (from 11.5-oz package)

  • 1/2

    cup finely chopped onion

  • 2

    teaspoons finely chopped fresh rosemary leaves (about 1 sprig)

Topping

  • 1/2

    cup Original Bisquick™ mix

  • 1/2

    cup old-fashioned oatmeal

  • 1/3

    cup packed brown sugar

  • 1/8

    teaspoon ground cinnamon

  • 1/4

    cup butter or margarine, melted

  • 1

    cup finely chopped peeled apple (1 small)

    Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups; spray paper baking cups with cooking spray.

    In medium bowl, stir together 1 1/2 cups Bisquick mix, the eggs, milk, pork, onion and rosemary until well mixed. Set aside. In small bowl, stir together 1/2 cup Bisquick mix, the oatmeal, brown sugar and cinnamon. Stir in butter and apple.

    Spoon about 2 tablespoons pork mixture into each muffin cup. Top each with about 2 teaspoons topping.

    Bake 12 to 15 minutes or until light golden brown. Cool in pan 5 minutes. Remove to cooling rack. Serve warm.
