Steps

1In 3-quart saucepan, heat water, brown sugar and cinnamon over medium-high heat. Stir until sugar is dissolved and mixture begins to boil. Reduce heat, and add apples. Cook uncovered about 20 minutes or until apples are softened.

2Stir together pancake ingredients until blended. Pour slightly less than 1/4 cupfuls batter onto hot greased griddle. Cook until edges are dry. Turn; cook until golden.

For additional flavor, spike your pancakes. Add 2 tablespoons brandy or bourbon to the batter.

The eggnog taste is not overwhelming. Traditional toppings, like maple syrup or cinnamon and sugar, still go well with these pancakes.
